This Quick and Easy Spicy Tomato Soup with Feta and Sausage, made with simple ingredients in one pot on the stovetop. This 30 minute weeknight meal is rich, creamy, hearty, and spicy. The feta adds an extra tanginess to this warming bowl of soup. It's great for those cold winter nights when you’re craving something warm and comforting. Serve each steaming bowl of soup with some freshly baked crusty bread. It's the perfect dinner for any night of the week. An added bonus, it's great for meal prepping and the leftovers make for the best lunch.

Easy Spicy Tomato Soup with Sausage and Feta
Ingredients
1 package (12 ounces) fully cooked spicy Italian chicken sausage links, halved lengthwise and sliced
3 Tablespoons extra-virgin olive oil
1 bay leaf
1 medium yellow onion, finely chopped
2 garlic cloves, finely minced
1 (28 ounce) can + 1 (14.5 ounce) can whole peeled tomatoes (don't discard juices)
3 cups chicken broth (vegetable broth works too)
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon cayenne pepper
1 cup feta cheese, crumbled
1/4 cup heavy cream
Chopped fresh basil for garnish, optional
Instructions
In a dutch oven or stock pot, heat the olive oil over medium heat. Add the sausage and onions and cook for about 5 minutes or until sausage is browned and onions are softened. Add the garlic and cook for another 1 minute.
Add the chicken broth, both cans of tomatoes with their juices, oregano, red pepper flakes, cayenne, salt and pepper. Using the base of a wooden spoon, break up the tomatoes.
Cover the pot and bring to a boil. Reduce heat to medium low and let simmer for about 20-25 minutes.
Remove from the heat. Using either an immersion blender or in batches with a blender, puree until smooth.
Stir in the cream and feta.
Serve with freshly chopped basil, crusty bread, extra feta on top, or whatever you desire. Enjoy!
