THE RECIPE

Peanut Butter Banana Chocolate Chip Muffins

INGREDIENTS

  • 2 cups all-purpose flour

  • 1/2 cup lightly packed brown sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup creamy peanut butter

  • 2 tablespoons vegetable oil

  • 2 large eggs

  • 3/4 cup whole milk

  • 2 ripe large bananas, mashed

  • 1/2 cup semi-sweet chocolate chips

INSTRUCTIONS

  1. Preheat the oven to 375 degrees F (190 Celsius). Line a 12 cup muffin pan with cupcake liners and set aside.

  2. In a large bowl, mix together the flour, brown sugar, salt, and baking powder. Set aside.

  3. In a separate bowl, beat together the eggs, peanut butter, milk, oil, and bananas (tip: mash the bananas in another bowl to make it easier).

  4. Stir in the wet ingredients into the dry ingredients until well-combined. Fold in the chocolate chips.

  5. Spoon the batter into the muffin cups, about 2/3 of the way full. Transfer to the oven and bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

  6. Place on a cooling rack and allow the muffins to cool. Serve and enjoy!

NOTES

  • This recipe makes approximately 12 muffins.

  • Store the muffins in an airtight container. Muffins will stay fresh for up to 5 days.

  • Muffins can be stored frozen for up to 3 months.
