Sourdough Lemon Muffins

Ingredients

  • 200g sourdough starter (discard or active)

  • 200g all-purpose flour

  • 130g sugar

  • 2 eggs

  • 6g (1 teaspoon) baking powder

  • 100g butter, melted and slightly cooled

  • 30g lemon zest (zest of whole lemon)

  • 30g lemon juice

  • 10g (2 teaspoons) vanilla extract

  • 5g (1 teaspoon) salt

Instructions

  1. Preheat oven to 350F/180C and line a 12 hole muffin tin with muffin liners.

  2. Mix the sourdough starter, eggs, lemon juice, vanilla, and butter in a bowl. Whisk together until well combined.

  3. In a separate bowl, whisk together the flour, salt, baking powder, lemon zest, and sugar.

  4. Combine the wet ingredients and dry ingredients. Gently fold together until just mixed, careful not to over-mix or the muffins will be tough.

  5. Spoon mixture into muffin cups, around 3/4 full.

  6. Bake for 20 minutes, or until muffins are golden brown.

  7. Remove the muffins from the oven, transfer to baking rack, and allow them to cool.
