THE RECIPE

spiced pepper chickpea bowl

INGREDIENTS

  • 2 cups cooked brown or white rice

  • 1 yellow onion, diced

  • 1 tablespoons ground cumin

  • 1/2 tablespoon ground coriander

  • 3/4 teaspoon cayenne pepper

  • 1 1/2 cups canned diced tomatoes

  • 1 red pepper, diced

  • Two 15-ounce cans chickpeas, drained and rinsed

  • Salt and ground pepper

  • Feta and parsley, for serving

INSTRUCTIONS

  1. Add the onions and pepper and saute over medium heat until tender, about 5-7 minutes.

  2. Add the cumin, coriander and cayenne and cook, stirring, for 1 minute. Add the tomatoes and simmer over medium heat until thickened, about 6 minutes. Add the chickpeas and simmer until the chickpeas are flavored, about 8 minutes.

  3. Season the chickpeas with salt, garnish with feta and parsley. Distribute the rice evenly into bowls. Serve and enjoy!
