Sweet Potato Gnocchi with Garlic Sage Butter Sauce

INGREDIENTS

  • 1 packages Trader Joe's Sweet Potato Gnocchi, cooked according to package instructions

  • 3 slices bacon

  • 1/2 cup frozen peas

  • Pinch of crushed red pepper flakes

GARLIC SAGE BUTTER SAUCE

  • 8 tablespoons butter

  • 1/3 cup heavy cream

  • 2 garlic cloves, minced

  • 5-6 sage leaves

  • 1 teaspoon salt

  • 1/4 cup Parmesan cheese


INSTRUCTIONS

  1. Cook bacon on medium-high heat until crisp. Once cooked, chop the bacon into small pieces and set aside.

  2. Cook the gnocchi: Using the same skillet, add the frozen gnocchi and cook according to package instructions, about 5-10 minutes. Gently add in the bacon and peas to the skillet.

  3. Prepare the sauce: Melt the butter in medium-sized pot over medium heat. Stir in the garlic, and cook until the garlic has softened and is beginning to turn golden brown, about 4 minutes. Stir in the sage and salt then add the sauce to the same skillet the gnocchi is in. Gently stir a few times. Top with parmesan cheese, if desired. Serve and enjoy!
